Well, my bacon bourbon is probably done, so I'm looking for a new fat washing project. I saw Don Lee of PDT (and an Averna winner) made a Hot Buttered Popcorn Rum using a fat washing technique. I thought that I'd take on rum as my next fat washing canvas, but I was hoping for some recommendations from the OBG as to what flavors might be interesting to wash into the alcohol.
I'm hoping to use a bottle of Angostura 1919 if that matters. Its an 8yr old Trinidad rum.
Thoughts?
